Cowboy Caviar

Okay, this one came from a friend and it is great. Our niece was down and we made it for her. She has been asking for the recipe ever since.

My wife finally got around to e-mailing her the recipe and here is what she wrote (one of our niece's nicknames is "C.C."):

COWBOY CAVIAR!!

CC Dip ( he he! ) :

14 oz can of Black Eyed Peas ( drained )
10 oz can oz Green Giant Shoe Peg White Corn ( drained )
Cilantro to taste ( chopped )
1 bundle of green onions ( chopped )
2 Avocados ( chopped )
2 Roma tomatoes ( chopped )

Dressing:
1/4 cup olive oil
1/4 cup red wine vinegar
1 tsp. cumin
1 clove of garlic ( chopped )
3/4 tsp. salt
1/4 tsp. pepper

Chop up all of the ingredients and mix together. Combine the dressing ingredients separately and add to the mixture right before serving, otherwise it can get a little soggy.

Serve with tortilla chips, or just frantically spoon feed yourself ... or just pick up the bowl and dump the mixture down your face like you've been lost on a desert island for years.

Seriously though, it's good stuff . . . . best when served cold . . .

Thanks for posting! I have been wanting to make this again but the recipe is locked up in the old dinosaur of a computer on my desk.
