| 16 ounces mushrooms chopped |
| 1 1/2 cups carrots chopped |
| 1 cup celery chopped |
| 1 cup yellow onion chopped |
| 1/2 cup shallot chopped |
| 1 teaspoon dried oregano |
| 7 slices crisp-cooked bacon chopped, divided |
| 4 cups beef broth |
| 2 tablespoons tomato paste |
| 2 tablespoons soy sauce |
| 1/2 teaspoon salt |
| 1/4 teaspoon black pepper |

- Set aside 2 tablespoons of chopped bacon
- place the rest of the ingredients in the slow-cooker and set on low for 6-7 hours or on high for 3-3 1/2 hours
- transfer 4 cups of soup to a blender, process until smooth and return to slow-cooker
- serve garnished with remaining bacon
