Slow-Cooker Bacon-Mushroom Soup

Prep Time: 20 min
Cook Time: 6 hours
16 ounces mushrooms chopped
1 1/2 cups carrots chopped
1 cup celery chopped
1 cup yellow onion chopped
1/2 cup shallot chopped
1 teaspoon dried oregano
7 slices crisp-cooked bacon chopped, divided
4 cups beef broth
2 tablespoons tomato paste
2 tablespoons soy sauce
1/2 teaspoon salt
1/4 teaspoon black pepper


Yield: 6
- Set aside 2 tablespoons of chopped bacon
- place the rest of the ingredients in the slow-cooker and set on low for 6-7 hours or on high for 3-3 1/2 hours
- transfer 4 cups of soup to a blender, process until smooth and return to slow-cooker
- serve garnished with remaining bacon
